Easter ham with beech leaves

If you would like to serve Easter ham with the wild mountain flavours of spring rebirth, decorate and consume it with young beech leaves.

Preparing:

Prepare the ham as usual while hiking in the mountains, making sure to go on foot or by bicycle. Collect a few beech leaves and carefully take it home. This requires that Easter and the spring leaf unfolding be at the same time. This year it’s just not.

Ingredients:

  • ham
  • beech leaves (Fagus sylvatica)
  • hiking boots
  • touring bicycle
